What Mongolia's Dairy Farmers Have to Teach Us About the Hidden History of Microbes

Dairying is one of the great puzzles of history. An archaeologist set out to unravel it and, in the process, discovered Mongolia's hidden wealth of endangered microbes.



In the remote northern steppes of Mongolia, in 2017, anthropologist Christina Warinner and her colleagues were interviewing local herders about dairying practices. One day, a yak and cattle herder, Dalaimyagmar, demonstrated how she makes traditional yogurt and cheeses.
In spring, as livestock calve and produce the most milk, Mongolians switch from a meat-centered diet to one based on dairy products. Each year, Dalaimyagmar thaws the saved sample of the previous season’s yogurt, which she calls khöröngo. She adds some of this yogurt to fresh milk, over several days, until it is revived. With this “starter culture,” she is then able to make dairy products all summer.
Afterward, as the anthropologists drove their struggling vehicle up steep hills back to their camp, graduate student and translator Björn Reichardt had a realization. Khöröngo is also the Mongolian word for wealth or inheritance.
In Mongolia, dairy products are vital dietary staples—more than 70 are made and consumed. From a certain perspective, then, the double meaning of khöröngo was unsurprising.
But there was some irony at work. In Mongolia, most herders have no idea that the khöröngo is, in fact, made up of a wealth of microbes. And that lack of knowledge could be a problem. Not only do these microbes bring benefits to the health, diet, and food practices of Mongolians—as well as a distinctive taste endemic to their cuisine—but they could be lost as Western industrial practices come to the country.

It’s become a dual mission of Warinner’s to not only help Mongolians value their microbial riches, but also explore the impact these regional microbes have had on human history. “Bacteria are amazing, overlooked, and misunderstood,” says Warinner, who splits her time between the Max Planck Institute for the Science of Human History in Jena, Germany, and Harvard University in Cambridge, Massachusetts.
Warinner and her collaborator, Jessica Hendy, an archaeological scientist at the University of York, started the Heirloom Microbes project in 2017 to identify and preserve rare microbes, specifically the bacteria that turn lactose into lactic acid, the first step in transforming milk into yogurts and cheeses. In the process, they hope to understand which microbes were unique to specific early dairy communities—and how they spread from one region to the next.
Combining interests in ancient diets, traditional cultural practices, and gut microbiomes, the Heirloom Microbes project collaborators are blazing a trail that traces the origins of dairying—and promises to reveal previously unknown microbial influences on human culture. The project has sampled dairy products from several parts of the world, including the European Alps and Jordan.

Endangered Microbes

But the project team has focused on Mongolia, a country where traditional dairying practices from nomadic herding communities remained largely intact. Along the way, they have realized they may be sampling what are effectively endangered microbes if the world’s remaining traditional dairying societies industrialize.
Warinner, who calls herself a molecular archaeologist, set out to investigate past human diets more than 10 years ago. She found a goldmine of information trapped in the tartar on skeletal teeth, including the individual’s DNA, the oral bacteria they carried, and clues to that person’s eating habits.
That’s why Warinner teaches her archaeology students to wield an unusual tool: a dental scalar. Researchers use this hooked metal instrument, commonly found at dentists’ offices, to scrape ancient tartar from exhumed remains. The calcified microbial biofilm on teeth effectively offers researchers dietary sedimentary layers for each individual that can be preserved for centuries.
When the decayed plaque is particularly tough to dislodge, Warinner pops the ligament-free tooth out, cleans it, and puts it back—without damaging the skeleton itself. (Following training, her students receive a “Dental Hygienist to the Dead” certificate.)

Warinner first started scraping the hardened calculus from medieval skeletons in England, Germany, and Greenland to study ancient periodontal disease. Results from Greenland, however, yielded truly unbelievable results: milk proteins on teeth from Vikings who lived roughly 1,000 years ago. Convinced it must be a mistake, Warinner ignored the Greenland data for a year.
When she eventually re-ran the samples and got the same exact results, Warinner was flummoxed. “When I realized it might be real, I almost scared myself,” she says. “What if we could reconstruct dairying in the past?” Dairy, she realized, could serve as a window into human diets—and the practices supporting those diets—through time.
Milk proteins trapped in layers of tartar would allow Warinner to not only determine which animal produced the milk, but also date milk consumption across space and time, something that had previously only been attempted by tracing milk fats in ancient pottery. This new approach provided scientists with a way to “extract evidence of milk directly from the mouths of past people,” Hendy notes.
Milk and the microbes behind dairy products are intriguing objects of study on many levels, say Hendy and Warinner. For one, Hendy says, “Humans are the only species to drink another mammal’s milk.”
Even more intriguing is why early societies would practice dairying for thousands of years when they could not easily digest lactose, the sugar in milk. For decades, scholars thought that dairying increased after humans evolved a gene to digest milk.

But that presumption was overturned once the extent of lactose intolerance was documented. In fact, research suggests that dairying was practiced for 4,000 years before the emergence of a mutation that allowed lactose digestion.

Lactose Intolerance

Even today, the majority of people around the planet—65 percent—are lactose intolerant, meaning their bodies struggle to break down the sugar lactose found in fresh milk. (Mongolia offers a stark example: Consumption of dairy products in Mongolia remains extraordinarily high, despite the fact that 95 percent of Mongolians are lactose intolerant.)
Milk continues to be an incredibly fraught food, a lightning rod for discussions around nutrition and health. “It’s either a superfood or the worst thing in the world,” Warinner says.
“Dairying is this amazing invention that people came up with in prehistory,” she adds, “but it’s a complete puzzle why and how it worked.” In addition, dairy products were among the earliest manufactured foods.
And that is the work of microbes. “Cheese doesn’t exist in the wild,” Warinner says. Milk itself is highly perishable and goes bad in hours.
Through trial and error, humans figured out how to harness bacteria to consume the lactose—and thereby acidify and ferment milk into cheeses and yogurt, respectively.
“People from deep prehistory, millennia ago, were domesticating microbes they didn’t even know existed,” Warinner says. “It must have seemed magical to them.”
In fact, Warinner notes, this microbe-driven approach was likely among the earliest—and most important—food storage mechanisms in ancient times. Warinner and Hendy soon turned their interest to identifying early dairy microbes. If they could find milk proteins in skeletal tartar, they hoped to find DNA from the lactic acid bacteria.

In arid or grassland steppe regions like Mongolia, there would have been few shelf-stable foods several millennia ago. Dairying proved transformative. Given the harsh and arid environment, barren landscape, and limited foodstuffs, it is hard to imagine how Genghis Khan could have conquered Asia and Eastern Europe without portable, probiotic-rich, high-calorie cheese, explains Warinner.

And the menu of dairy options is vast. Mongolians milk every one of the seven livestock species in the country: cows, sheep, goats, horses, yaks, reindeer, and camel.
From that native diversity, Mongolian milk products have a distinctive terroir, or characteristic flavor infused by the environment producing the food. Aaruul, which are dried, hardened curds eaten as a snack, have a pungent, tangy flavor. Shimiin arkhi is yogurt made from yak’s or cow’s milk that is distilled to make a vodka. Airag is a fermented mare’s milk liquor that is light and bubbly. “People listen to mare’s milk ferment and say, ‘It’s alive’ when they hear it fizzing,” Hendy says.
Mongolians hand down starter bacterial cultures, the khöröngo, from generation to generation—and typically the work is carried out by women. “They often receive starter cultures from their mothers, who received it from their grandmothers,” Reichardt says. “There is a chance that these microbes are hundreds of years old and still alive today.”
But when Warinner and Hendy first asked to collect dairy microbes in Mongolia, the nomadic herders denied their products had any bacteria in them. “In Mongolia, microbiology is taught from a clinical perspective—namely, that bacteria only cause disease,” Warinner says.
She found that herders were unaware of beneficial or food microbes. They also did not know that the hides and wooden vessels used to store starter cultures were crucial to maintaining these bacterial populations over time. Unbeknownst to contemporary and early herders, the porous, organic materials used as containers were inadvertently inoculated with the lactic acid bacteria over and over again. As a result, the containers themselves helped desirable microbial populations persist over time—in part because nothing else, including pathogens, could grow in the containers.

“Pathogens are like weeds, they are the first to grow, whereas lactic acid bacteria are like old-growth trees,” Warinner explains. “If you get the lactic acid bacteria established, they’ll prevent weeds from growing.” In short, the traditional nomadic dairy model promotes the growth of “good” bacteria that naturally outcompete pathogens.

Western Ways

Still, that hasn’t stopped the spread of western practices, including industrialized dairy cultures. The Heirloom Microbes project has not found traditional practices to be as prevalent in the other regions the team has studied, such as Jordan and the European Alps, as compared to Mongolia. The concern, as stated in their project grant, is that with “contemporary food globalization and industrialization, traditional methods of dairying and their unique microbial cultures are being lost at an alarming pace.”
While traditional practices continue in isolated pockets in Jordan and the Alps, those practices can be, in part, a tourist attraction. European countries largely industrialized their dairying procedures in the 1970s and 1980s. In contrast with traditional methods using heirloom bacterial cultures, industrial practices begin with sterilization and then introduce lab-grown, high-performing bacterial cultures. In these industrialized systems, everything has to be constantly killed in large part because the first things to come back are pathogens.
For Warinner and her colleagues, helping Mongolian herders and policymakers understand the benefits of the traditional methods has become even more urgent as the first steps toward dairy industrialization begin in Mongolia. Most notably, European lab-grown starter cultures are being introduced into the region.
“Bacteria are amazing, overlooked, and misunderstood,” says anthropologist Christina Warinner.
Warinner does not think the lab-grown strains, produced under highly controlled conditions, will fare well in Mongolia simply because they lack the region’s traditional diversity. “These are cultures developed in a completely different environment,” she says. “Industrial methods of sanitation are not easily implemented on the steppe and doing so would disrupt the microbial ecologies that support traditional Mongolian dairying,” she notes. “I fear that well-intentioned attempts to introduce such techniques—without consideration of their cultural context—would actually reduce the safety of the dairy products and radically transform and undermine the lives of nomadic herders.”
Hendy adds that microbes may not only support the process of dairying but also play a role in people’s health and digestion. Microbes in traditionally made dairy foods help maintain a healthy gut microbiome, which could be altered—to unknown effect—by a switch to industrialized microbial cultures.
Over the past three years, the Heirloom Microbes project team has scraped tartar from roughly 200 skeletal remains around the world. As they piece together ancient microbial sequences in the tartar, they will start this summer to sample the microbiomes of both Mongolian nomadic herders and urban dwellers to determine whether herders’ gut microbes have played an unrecognized role in their dairy digestion.
As a growing body of research makes clear, the gut microbiome exerts a shocking degree of control over many aspects of our health—from mood to immune function to pain. It may even shape seemingly unrelated aspects of our behavior, including social interactions.
Mongolian researcher Soninkhishig Tsolmon has documented nutrition in her homeland for the last 20 years. It has not been easy. With few resources or existing studies available, Tsolmon has focused on the dietary differences between nomadic and urban people.

Science and Tradition

Tsolmon suspects that many traditional foods could reveal intriguing health and microbial connections—but time is running out. In addition to looming industrialization, climate change is transforming the landscape under herders’ feet.
“We’re starting to lose traditions,” Tsolmon says. “Mongolians have traditional ways of using meat and milk.” The traditional meat-based diet in the winter is replaced with fermented dairy products in the summer that, elders say, eliminate the toxins from a winter’s worth of meat eating. She adds, “I’m afraid that some bacteria are disappearing.”
To help stem the loss, Tsolmon, Warinner, and their colleagues created opportunities to share knowledge between the scientists and the herders. In July, for example, the researchers held a Seeing Microbes workshop in villages near Mongolia’s Lake Khuvsgul.
There the group showed local herders microscopic images of the bacteria in their dairy products. “We explained how their practices maintain plenty of good microbes in their products—and that microbes don’t just cause disease,” explains translator and graduate student Zoljargal Enkh-Amgalan. “They were proud of their way of life and how pastoralism and dairying still exist,” she adds.
At another meeting earlier last summer, traditional steppe herders, cheesemakers from the Swiss Alps, the Heirloom Microbes team, businesspeople, and government officials came together for a traveling conference held in both Mongolia and Kyrgyzstan. The German Federal Ministry of Education and Research and the European Research Council funded the meetings.
These disparate groups shared their insights on traditional practices and the science underpinning their success. While traditional dairying practices, which go back at least 5,000 years, have not been studied intensively, they are clearly adapted to the Mongolian landscape and sustainable, explains Warinner.

Warinner believes the deep time emphasis that her discipline brings to such discussions is especially valuable. “Anthropology matters. Archaeology matters,” she says. “We work to understand humans in the past and how we are today—in order to inform public opinion and government policies.” That perspective can help counterbalance the ways in which globalization and well-intentioned interventions may, intentionally or not, threaten traditions, with complex consequences.
In addition to educating Mongolians about the science underpinning their ancestral practices, Warinner and colleagues hope they will take stock of the microbes that have played a starring, yet unsung, role in their nutrition and health. It is ironic that Mongolia has this very deep tradition of dairying that is so central to identity, culture, and history—and yet possesses no archive or any centralized collection of the many bacterial cultures. The Heirloom Microbes project collaborators hope to develop and maintain a storehouse of these resources for Mongolia.
“We live in a microbial world,” Warinner says. “We are only now realizing how integral microbes are to being human.” Put another way, science is just starting to uncover the degree to which microbial cultures have shaped human cultures.

Mongolia bans exporting live livestock animals

ULAN BATOR, July 3 (Xinhua) -- The Mongolian government on Wednesday banned exporting live livestock animals and pushed forward plans to improve its meat processing capacity, according to the government's press office.
"Previous governments' decisions on exporting live livestock animals have been overturned," the government's press office said in a statement. "Instead of it, Prime Minister Ukhnaa Khurelsukh has ordered relevant officials to pay special attention to increasing the capacity of existing meat processing plants and building new ones in order to raise meat exports."
Animal husbandry is the backbone of the landlocked country's economy as nearly 40 percent of the country's nomad population depends on animal husbandry for their livelihood.
As one of the last nomadic countries in the world, the Asian country has more than 66.46 million livestock animals as of the end of 2018, according to the country's National Statistics Office.
Mongolian Minister of Food, Agriculture and Light Industry Chultem Ulaan said in May that the country earned around 190 million U.S. dollars from meat exports in 2018, with most of the revenue coming from its exports to China.

Mongolia produces 48% of total raw cashmere in world

Mongolia produces 48 percent of the total raw cashmere in the world, Montsame reports.
For centuries, Mongolian nomads have a long tradition of raising five kinds of livestock, including goats, in the vast territory and harsh climate, which resulted in four naturally occurring colours that nomads are able to obtain from their goats.
The naturally occurring colours that are supplied by Mongolian nomads are white, beige, warm gray and brown. On the contrary, the cashmere supplied by China (Inner Mongolia) are obtained from goats that are raised in restricted farming facility. It limits naturally occurring colours by two colours.
Mongolian cashmere manufacturers, in particular Gobi Corporation produces its cashmere products by using four naturally occurring colors under its Gobi Organic label. It is highly valued and sought after by consumers of Japanese, French, German, Canadian and South Korean markets.
As of today, 85 percent of the total raw cashmere supplied by Mongolia are being purchased by companies from China, Italy and England in scoured /washed/ or de-haired form which are then used to produce garments to be sold under world known high end luxurious brands. It shows the quality and value that Mongolian raw cashmere can offer to world renowned brands.
Mongolian cashmere fibers are longer in length compared to Chinese cashmere fibers, therefore, resulting in higher quality cashmere yarns. High quality cashmere yarns directly influence on the quality of finished garments.
Mongolian producers are using up-to-date technology to produce high quality products from its initial stage of primary production to the final stage of garment production to supply to the international market.
The Alashanzuoqi white cashmere goats in China are well known for its white cashmere. Due to the high demand for this type of cashmere and high value for its white cashmere, nomads in certain regions in Mongolia (Bayankhongor province) have started herding white goats with a purpose to get the high value for its raw cashmere. As a result, we have high quality white cashmere. Furthermore, there are certain regions in Mongolia that are well-known with their high quality specific colors, which allow companies to work on those regions to get the highest quality raw cashmere that can be supplied to the world market.

Mongolia eyes exporting 180,000 tons of meat per year

ULAN BATOR, Jan. 9 (Xinhua) -- Mongolia has the potential to export 180,000 tons of meat per year, local media reported Wednesday, citing the country's Ministry of Food, Agriculture and Light Industry.
"Mongolia's meat exports have seen a significant increase in recent years. Particularly, our country exported 54,900 tons of meat and meat products in 2018, a 20-year high," said Togoo Gantogtokh, head of food industry policy management department at the ministry.
"Indeed, our country has full potential to export 180,000 tons of meat a year," Gantogtokh said.
Meat is a main product in Mongolia's consumer basket. As Mongolia increases meat exports, meat prices in the nomadic country have been skyrocketing.

Mongolia, Cheese, and the Future of Dairy in the Era of Climate Change

Cheese and climate change are connected, and some of the current economic and environmental woes facing American dairy farmers are well-established in Central Asia.


From coast to coast, American farmers are battling record-setting heat waves, fires, droughts, and excess rain. Partially deployed to calm grazing animals stressed by adverse weather, but also help stop, and even reverse, climate change, some dairy farmers are returning to 100 percent pasture-based diets for their animals by introducing innovative grazing techniques that they believe will help create happy cows and sequester carbon in the process.

Surprisingly, some researchers say the recent fate of nomadic dairy-herders in Mongolia may provide a chilling glimpse into the future of cheese in North America and Europe, if our production and consumption patterns don’t change.
The people of Mongolia have depended on dairy since about 3,000 BCE, when an early shift in the climate transformed the land from forest into grassland and desert, says Paul Kindstedt, author of Cheese and Culture: A History of Cheese and Its Place in Western Civilization, and a professor at the University of Vermont. Mongolia is one of the few pockets of the world that has carried out the same farming and herding practices on a large scale for thousands of years, he says.
Today, about 30 percent of the 3 million people living in Mongolia are nomads. They graze yak, cows, sheep, goats, horses, and camels in the world’s most sparsely populated nation, and they survive on the meat and dairy their herds produce. But their lives and livelihoods are at risk from climate change, compounded by political upheaval from the communist era.

While many of the details differ, the U.S. dairy industry is undergoing an its own upheaval. Since 1991, small farms have been crowded out by large-scale producers, and a combination of politics, economics, and climate change is putting the future of small-scale U.S. dairy at risk.

What Mongolia Teaches Us About Climate Change

“Climate change has reshaped the Eurasian steppes repeatedly, and the people who lived there learned to adapt in a symbiotic fashion that benefited the landscape and the people,” Kindstedt says. “It’s a delicate dance, because if people use too many resources too quickly in an environment like that, it means certain death. Living nomadically with a limited number of animals on the grasslands was their only choice.”
While communism drove Mongolian people to the cities, its fall sent them back to their herding lifestyles. In the meantime, grazing had become much more intensified. Now, more than 65 million livestock graze the steppes of Mongolia, compared to about 23 million in the communist era. “Overgrazing has caused the degradation of pastureland, especially by goats, which have exploded in number because of the price goat cashmere brings abroad,” Kindstedt says.

With a stacked deck, re-minted nomads are playing against record-breaking extreme weather. This winter, temperatures dropped to -50º C, and hundreds of thousands of grazing animals died. (Known as Dzud, the lethal Mongolian winters have wiped out more than 20 million animals since the early 2000s). Despite extreme cold spells, average temperatures in Mongolia have climbed 2.2ºC since 1880, leading the nation’s environmental ministry to report that hundreds of rivers, lakes, and springs have dried up in recent years.
As a result, nomads have flooded back into Mongolia’s jam-packed capital of Ulaanbaatar, while Nomads who continue to herd and live on the steppes are facing drought, hunger, and even starvation.
Incredibly, most of the cheese available in Ulaanbaatar is still imported. “Requirements for sanitation, safety, and traceability creates steep barriers for many of these producers,” Kindstedt explains. “Think of how hard it is for an artisanal cheesemaker in Vermont to get distribution in metropolitan areas, and multiply that by a thousand.”
Until there’s a viable avenue for herders to get sustainably produced traditional Mongolian milk products to market, there’s no motivation to stay and battle the harsh elements of the steppes.

“The government is taking the crisis seriously, and working to establish a market for cheese, which they believe will help stabilize the grazing practices,” Kindstedt says. A planned cheese-making facility in the northern Mongolian village of Khatgal seeks to meet international standards for food safety and hygiene in order to send traditional Mongolian milk products into the global market. By making exports possible, Mongolian dairy farming could become a viable livelihood again, reversing the trend of urban migration.

Lessons for American Cheese

Mongolia offers a stark example, to be sure. But does it really have implications for the way we produce (or buy) cheese in the U.S.?
Environmental groups have long warned consumers about the sizable carbon footprint of this popular food. And because it requires so much milk to make, and cows release methane into the atmosphere, cheese ranks just below meat from ruminant animals such as beef and lamb.
But there’s a growing consensus among farmers and scientists that cheese (and meat) production, managed responsibly, can be a part of the solution to the climate crisis.
Climate change is decimating soil fertility around the world, and especially in the American West, UNESCO warns. But sustainable farming methods, including responsible grazing practices, can dramatically increase soil fertility, declares a recent study published in Agricultural Systems.
This year is on pace to be the fourth-hottest on record, after 2015, 2016, and 2017. This summer has been nicknamed “the summer of fire” as flames raged across the country. This extreme weather is having a huge impact on dairy farmers, says Guy Jodarski, the supervising veterinarian for Organic Valley Co-Op.
“[Last summer] we had an extreme drought in the Pacific Northwest, and extreme heat in the Northeast. Cows are happy at 50 and 60 degrees. Ninety and 100, not so much,” Jodarski says. “I’m on the phone with farmers regularly discussing how to keep the animals healthy, unstressed, and cool.”
In his work with dairy farmers in 35 states, Jodarski has a bird’s-eye view of America’s rural landscape. And what he sees—in addition to the weather challenges—isn’t pretty.
“The upheaval I’m seeing in rural America sounds somewhat similar to what’s happening in Mongolia, to be honest,” says Jodarski. “In my lifetime, I’ve seen more than 90 percent of the dairies in Wisconsin shut down; people are just streaming out of towns to cities; high schools can’t field football teams; there are empty storefronts on our main streets.”
Maple Hill Creamery, an organic grass-fed dairy company founded in 2009 currently works with 199 farms grazing 8,860 cows on 22,700 acres of land. Grass-fed dairy and beef bring home more bacon to the small farmers Maple Hill works with, and co-founder Tim Joseph says it goes deeper than that.
“Grass-fed organic dairy is inherently regenerative,” says Joseph, “because cows grazed on perennial pasture put the organic matter they produce—carbon—back in the soil.” Managed grazing can also help retain more water in the soil, making the land more resilient in the changing climate.
Here’s where herding, grazing, and cheesemaking close the climate loop, says Kindstedt.
“Cheese was essentially created thousands of years ago in part as a response to … over-intensive agricultural practices,” says Kindstedt. “Neolithic humans began herding goats and sheep more intensely as they could survive on land unfit for crops. At the same time, we invented pottery, which we used to store milk and eventually, yogurt and cheese.”
The culture of cheese-making was created by a man-made climate disaster, and now may be contributing to a second, potentially more catastrophic event. Unless we reverse course, Kindsted says.
“Masses of humanity in Western and sub-Saharan Africa have already been made desperate by climate change,” Kindstedt says. “Italy has shut its doors to the flow of migrants desperately fleeing their homes, and now they’re knocking on Spain’s door. And that’s just the tip of the iceberg if climate change continues.”
Cheese has a notoriously large carbon footprint, but it can be significantly offset by grass-fed, organic farming practices, Organic Valley’s Jodarksi explains.
“Grazing not only prevents soil erosion, but by walking around and tamping down dirt, the cows essentially sequester the carbon they emit through their burps back into the soil,” Jodarski says. “Their manure also gets spread across fields. You can get a net positive, especially when what they’re foraging on is high- quality grass.”
Milk and cheese from grass-fed cattle fetch higher prices that can keep family farmers afloat who have been squeezed out by the rise of Big Milk. And while a recent study found that sales of grass-fed dairy climbed 38 percent, stronger sales will accelerate the benefits.
In both countries, pasture-based practices might ensure a brighter future for cheese.

Global livestock experts gather in Mongolia to address sustainability issues

ULAN BATOR, June 11 (Xinhua) -- The 8th Multi-Stakeholder Partnership meeting of the Global Agenda for Sustainable Livestock (GASL) kicked off here on Monday to address sustainability issues in the livestock sector.
Over 120 livestock experts from 34 countries will discuss ways to ensure that the long-term benefits of livestock contribute to sustainable development.
The five-day meeting is expected to cover four topics of sustainability, namely food and nutrition security; livelihoods and growth; health and animal welfare; as well as climate and natural resource use.
"I hope that we will make many important decisions to increase livestock production that are well suited climate conditions, rangeland, natural resources and ecosystems of the countries which are developing nomadic herding," Batjargal Batzorig, minister of Food, Agriculture and Light Industry, said at the opening ceremony.
"We will share our experience and views on the nomadic herding," he added.
Mongolia is one of the last nomadic countries in the world. As of 2017, the number of livestock animals in the East Asian country with a population of just over 3 million has reached 66.2 million.
Animal husbandry is the backbone of the landlocked country's economy as nearly 40 percent of the country's nomad population depends on animal husbandry for their livelihoods.
The meeting is co-organized by the Ministry of Food, Agriculture and Light Industry of Mongolia, the United Nations Food and Agriculture Organization and the GASL.

Mongolia targets 10-fold increase in meat exports: minister

[ULAANBAATAR] Mongolia will aim to raise meat exports tenfold in the coming years as it tries to diversify its heavily mining-dependent economy, the country's agriculture minister told Reuters.
The country, landlocked between Russia and China, is under pressure to find alternative sources of growth after a decline in global coal and copper prices forced it to turn to the International Monetary Fund for aid last year.
Mongolia managed to boost meat exports more than threefold in 2017, with the total volume reaching 29,300 tonnes, but the country has failed to reach its potential as a result of longstanding animal health concerns.
"This is still a dissatisfactory quantity," said Batzorig Batjargal, Minister of Food, Agriculture and Light Industry, on the sidelines of a conference in Ulaanbaatar.

"We have the potential to export more than 200,000 tonnes a year and there are many countries that want to buy Mongolian meat, which means we can increase meat exports tenfold in the near future," he said.
With total livestock at 66 million heads last year and a human population of just 3 million people, Mongolia's meat producers have no choice but to find alternative markets if they are to be profitable, Batzorig added.
Meat exports into China and Russia, its main markets, have been restricted as a result of outbreaks of foot and mouth disease (FMD), but Batzorig said the country was currently implementing a new animal health law that should resolve the problem.
"It is true that the state was out of control on animal health in the past few years, but the current government has bold plans to change it," he said.
Divangar Sangaa, an expert at an animal health project in Mongolia run by the Swiss Agency for Development and Cooperation, said Mongolia needs now to focus on improving animal quality and health standards.
It should also work to persuade the World Organization for Animal Health to grant FMD-free status to Mongolian livestock, he said.
The country is also working to find new markets in Japan and the Middle East, with Iran a particular target as producers hope to benefit from higher halal meat prices, said Battogtokh Ish-Ochir, manager of the Mongolian Meat Association.

From steppe to catwalk: The Mongolian co-ops protecting a way of life

In the steppes of Mongolia, the nomadic herders’ way of life and indeed the landscape itself is under threat. But herder co-operatives, fronted by a new London-based fashion brand, have ambitious plans to reverse this.
Tengri aims to protect the Mongolian landscape and herders’ livelihoods from rapid industrialisation and land degradation. It is turning co- operatively traded yak wool into high fashion knitwear using a team of expert knitwear makers in Hawick, Scotland – a town famous for knitwear since the 18th century.
The wool is sourced directly from two co-ops representing 1,500 nomadic herder families in Mongolia’s Arkhangai province. Hand-combed from semi-wild animals living in the steppes, the fibres are robust, breathable and hypo-allergenic.
Because Mongolian yaks live at high altitudes and endure extreme weather, their wool is 10-15°C warmer than merino wool.
The brand is the brainchild of Nancy Johnston, who has witnessed first-hand the challenges threatening the herders and their culture. “As a kid, I saw a picture of Mongolia and the images fascinated me,” she explains. “The epic landscapes, nomadic way of life and the delicate and interconnected relationship between herders, the land and animals all really captivated me.
“In 2013, I finally made it to Mongolia, fulfilling a life-long dream. It was there, in the vast steppes, that I lived with a nomadic yak herder family for the first time and fell in love with the yaks and the delicate, yet harsh, nomadic way of life.
“I was also able to experience first hand the challenges the family faced. They had a young daughter and were desperately trying to save money for her education.”
But Nancy knew the family would never be able to offer their daughter the opportunities she had had. “I was a lucky refugee baby born in the USA, the first child in my family born outside of Asian soil. I saw myself in that little girl and couldn’t stop thinking about what could be done to help her and her family.”
Nancy, a social worker specialising in programmes that deliver systemic change and social impact, discovered that the herders’ livelihoods were threatened by rapid industrialisation and land erosion. According to Conservation Biology, 95% of forage across the Tibetan plateau, Mongolia and northern India has been consumed by cashmere goats, leaving just 5% for wild animals to graze.
Mongolia, with a population of just three million, is the second- largest global supplier of premium fibres, supplying the world’s top luxury fashion brands.
“The €4 billion cashmere industry is currently experiencing a supply crisis,” Nancy says. “Severe land desertification, effects of climate change, dwindling supply and increasing global demand for cashmere is resulting in a vicious and unsustainable cycle of poverty and harm to nature, wild animals and the people living in it.
“Many consumers unknowingly choose to purchase unsustainable knitwear, which results in wild animals becoming the ultimate fashion victims. What the world doesn’t know is that yak fibres are a sustainable and eco-friendly alternative.
“Mongolian yak roam semi-wild, often at high altitudes. They graze gently on the steppes and are an indigenous species that lives symbiotically in the ecosystem, allowing plant species and other wildlife to regenerate and thrive.
“I felt I had a moral choice, if not an obligation, to work with nomadic herders to launch a fashion brand that would make a difference.”
She used her life savings to buy her first tonne of yak fibre direct from herders. “Slowly, what started out as a small group evolved into a collective movement of people involved in design, fashion, arts, technology, marketing, business, conservation biology and many other disciplines helping to shape Tengri,” she says. “It’s where design, fashion, ethics, technology, business, environmental activism and individual consumer choice come together to do good.”
Nancy decided that Fairtrade was not enough for this venture.
“It felt right that I set up Tengri as a ‘fairshare’ business, designed in partnership with the herders from whom I source premium noble yak fibres directly, and share the business profits with them,” she says. “It’s a relatively simple model and in a very short time, the number of nomadic families involved in the co-operatives trading with Tengri grew from 398 to more than 1,500.”
Tengri pays herder co-operatives double market rate with a deposit upfront, before the fibres are combed. Once combed the herders are paid again and finally they are given a share of the profits on sales. In its first year of trading, Tengri has increased the herders’ household income by 175%.
Tengri’s agents in Mongolia are the herder co-ops themselves. The fibres travel straight from herder families to Tengri’s appointed freight agent and direct to the plane. The herders oversee the whole process; a first in the history of Mongolia.
Since autumn 2014, Tengri has been the first brand to use Mongolian yak fibre to develop and manufacture yak yarns in Britain. With support from Heriot-Watt University, it is launching a new line of luxury yarns made in Yorkshire, which will go into every product.
The knitwear is designed in London and made in the UK with undyed Mongolian yak fibres. To maximise transparency, these stories will soon be available to consumers as video features on the Tengri website and the Provenance website, alongside interviews with herders. Tengri is also investigating the use of mobile phone and 3G technology to enable herders to share their experiences with the Tengri collective and its customers.
The team is still working to improve its supply chain. Through processing, 25% of the yak fibre becomes premium down, which is spun into yarns and woven into fabrics. That means approximately 75% of the fibres are waste, but Tengri plans to treat them as a by-product.
“This by-product comes in three variety of grades and gets discarded in many developing countries,” Nancy explains. “We’ve imported all the waste fibres to the UK and are looking at ways to make use of this fibre, including the use of a range of green technologies, closed-loop systems, ballistic-based technology and waterless and toxic-free dyes made from locally sourced plants.”
Tengri itself means ‘Sky God’ – the primary deity of a pantheon of gods who governed all human existence and natural phenomena on earth. “The words ‘Tengri’ and ‘Sky’ are synonymous,” says Nancy. “The physical appearance of Tengri was unknown and considered to be timeless and infinite, like a blue sky. These qualities and the meaning of Tengri is what inspires us.
“Respect for the delicate balance between human existence and nature is at the heart of our approach. Working with herder co-operatives, as well as spinning, processing and knitting companies, we aim to help preserve rural and remote landscapes and support nomadic herders’ way of life.
“In terms of auditing for ethical standards, Tengri has introduced a whole new industry standard in itself, offering 100% transparency. It’s actually setting a new standard.”

How I Used 'Millennialist Capitalism' to Help My Employees


My employees are nomadic herders in Mongolia.

When we think of “rigging the system,” we connote something deleterious – and rightfully so. My goal has been to change that perspective. I wanted to rig the system in the favor of the people I worked with as well as the people who worked for me.
My business partner Diederik Rijsemus and I are the founders of Naadam Cashmere, a socially-conscious brand that sources cashmere from local herders in Mongolia. When we started the company, we were confronted with a wave of inconsistencies that permeated from the bottom to the top of the supply chain. Frankly, it was BS.
At the bottom of our supply chain are the people who herd goats and sell cashmere. They are the best in the world at what they do, and the trade has been passed down for centuries. These herders know the land and the practices better than anyone else, yet they are often taken advantage of. These are the most remarkable people on Earth – most of the women are stronger and tougher than NFL players. However, the system doesn’t work in their favor.
Here’s how it works: outside traders come in to the market and force prices down. They buy as cheap as possible and sell up to make a margin. The average margin determines the global commodity cost average. The herder never realizes the value of his organic, hard-earned materials.
We realized that if we went directly to the source, we could remove the middleman. This allowed us to outbid the other traders and provide fair value for the cashmere we were purchasing, while still pricing ourselves lower then the competition. In order to achieve this, we held auctions where we worked with local government officials to pre-set prices about the average cost. We set the price high because we don’t need the margin. We then got our pick at the whole lot, while also positively impacting the communities and the livelihood of the herders. The ultimate goal was to rig this decades-old trading system to favor the base of the supply chain, while also making a profit. It is not Marxism – I call it “millennialist capitalism.”
We believe supporting the community can actually be good for our bottom line. Our supply chain uses social impact investing as a tool to positively impact the lives of the people we work with directly and indirectly. I use a simple principle that Fortune 500 companies have known for years – if you invest in your employees, profitability increases. For instance, Google  GOOGL 0.72%  is known for its lucrative compensation packages as well as the opportunity to grow within the company. In other words, Google invests company profits directly back into the supply chain. Google’s supply chain may look different than mine, but the concept is the same. The difference is that my employees happen to be nomadic Mongolian herders. Their names are not Brad, Steve or Melissa, and they don’t sit three desks down from me. But I also have to take the time to fully understand what truly incentivizes them. Diederik and I travel to Mongolia, drive 20 hours through mountain roads to get to them, but the conversation is similar. We ask them about the resources they need, how we can address their pain points and how we can help them achieve their goals. We then determine the best way to incentivize them and invest our profits into the things that affect them most. For instance, the health of their animals is very important, so we invest in veterinary programs for every herder that we buy from. Healthy animals create stronger, healthier fibers that are more valuable. We then buy them at an increased value. The happiness and health of our herders and their livestock have a direct impact on the value of our materials.
The fashion industry has never really operated like this – it has primarily existed to increase profit margins by marginalizing communities and people at the bottom of the supply chain. We found a way of increasing profit margin without hurting people, and we are transparent about the entire process. This year, we bought 40 tons of cashmere and gave $150,000 back to The Gobi Revival Fund NGO, which inoculated 250,000 goats for 1,000 families providing 100% coverage to an entire region.
This is social-impact investing in supply chain economics. It feels like the right way to do business.
